Lamb on a cross BBQ/asado is a classic South American cook that consists of lamb being flayed and hung on an asado cross over open pit fire. This show way of cooking is a centerpiece in Argentina. It is associated with gaucho/cowboy styles of living; and is one of the core main dishes for every aspiring fire cook.
From the Dolomites in Italy in the middle of a beautiful wilderness we cooked a lamb on the Cross.
It took a bit longer than I expected with over 8 hours or slow cooking. As always you will find in this experiences different things that will challenge you. For me was the fact that we had 70 cm of snow and keeping the fire at temperature was not easy. Next time we will first prepared a hole clean from the snow. Anyway
at the end it worked out so we get the honor of showing you how we cooked this lambs on the asado cross. So go out find an open place and start with some tips and tricks that will help you conquer this amazing cook experience in your backyard.
