Steak alla Patsy comes to us from Patsy’s the iconic red sauce Italian restaurant in New York City. It’s an American-Italian dish inspired by Italian flavors but it’s distinctly American-Italian. First, bacon is rendered and made crisp. While that is happening the onions are softened and slightly caramelized. Then white wine is added and reduced, and finally, the scallions, basil, crisp bacon, and stock are added and cooked down.
