Sometimes spaghetti wants a drink – welcome to “drunken spaghetti”. A flavorful meal that takes less than 30 minutes to make! Quick and easy, but yet delicious and colorful. Hope you enjoy my recipe and give it a try – you will love it 🙂

Ivo’s “Drunken Spaghetti”
Ingredients:
• 200 g (7 oz.) spaghetti pasta
• ¼ cup (4 TBSP) Extra Virgin Olive Oil (EVOO)
• 3 garlic cloves, minced
• 50 g (2 oz) (~1/3 cup) diced pancetta (alternate, use prosciutto)
• 1 dried chili pepper (or 1 fresh chili pepper – or – chiles flakes to taste)
• 2 TBSP tomato paste
• ¾ cup, dry, red wine
• 2 TBSP fresh Parsley, chopped (optional)
• Grated Parmigiano-Reggiano cheese to taste (Optional)

Process
• Bring a pot of water to a boil – add salt (3/4 TBSP per liter of water in pot)
• Add spaghetti, stir, put lid on pot and bring back to a boil, then remove lid and cook time as per instructions on the pasta package.
• While pasta is cooking, make your sauce, as follows:
• Put EVOO in a large pan and add the garlic – sauté for 30 seconds.
• Add pancetta, chili pepper and tomato paste. Mix all together and cook for 2 minutes, then simmer till pasta is cooked.
• Remove cooked pasta and add to pan with the EVOO sauce (if there’s a bit of pasta water added, that is perfectly fine as well) and mix to coat the pasta with your EVOO sauce.
• Once coated, add the red wine, and mix again. Bring up the heat and cook for 2 – 3 minutes, stirring often, as the wine will be absorbed.
• Add optional parsley, remove, and serve with optional grated cheese
• Enjoy
