Watch how we make the traditional Italian ragù – a quintessential dish of Emilia-Romagna. Most of you would know it as Bolognese, however this internationally renowned recipe doesn’t quite capture the flavours and textures that the people of Bologna Italy have been curating for centuries…So we thought we would show you!

SUPER TIP: In this week’s vlog, Chef Rigo provides us with a quick demonstration on how to correctly cut an onion! Fair to say I’ve been doing it wrong my whole life…oops.

Here is the recipe:

Ingredients
750g mince beef
250g free range pork mince
300g tomato paste
150mL red wine
1L milk
8 tbsp extra virgin olive oil
Small bunch celery diced
1 carrot diced
1 large onion diced
1 full stem rosemary chopped
Salt and Pepper

Method

Mix the beef and pork mince together.

Place 3 tbsp of extra virgin olive oil into a pot and set tempurature to high. Once the oil is hot, add the diced onion, carrot and celery and cook on high heat for 5 minutes.

In a fry pan, heat 5 tbsp of extra virgin olive oil. Break the beef and pork mince into small pieces and cover the bottom of the pan. Once the bottom has a nice brown colour, flip the mince and cook on the other side. This step can be separated into 2 steps as all of the mince won’t fit in the pan at the same. After the first round of mince has cooked on both sides, transfer it to the pot and cook for 20 minutes. Proceed to cook the remaining mince in the fry pan.

Add the tomato paste to the pot with the mince and vegetables and stir well.
Once the second round of mince has cooked, add the red wine to the fry pan and wait until the alcohol has evaporated (approx. 5 minutes).

Season the pot of mince and vegetables with salt and pepper. After approx. 5 minutes, the remaining mince and red wine can be added to the pot.

Add the rosemary, pour in the milk and stir so that everything has been mixed well.

Cook on low heat for 4-5 hours.

Once the ragù has cooked for 4-5 hours, you can serve it any type of pasta that you desire. Gnocchi is our favourite, and we also added some fave (beans) to be healthy!! Don’t forget to top it off with some delicious cheese.. Yum!

And that is how you make a delicious traditional Italian ragù!
