In this masterclass, we will walk you through:

Ingredients:

For the meatballs:
– 4 teaspoons non-fat milk
– 1/3 cup whole wheat bread crumbs
– 1/2 pound ground chicken or turkey
– 1 garlic clove, minced or grated
– 2 tablespoons chopped fresh parsley
– 2 tablespoons freshly grated Pecorino Romano cheese
– 2 tablespoons freshly grated Parmesan cheese, plus extra for serving
– 1 egg, lightly beaten
– Freshly ground black pepper, to taste
– Non stick cooking spray

For the soup:
– 1 tablespoon olive oil plus more to finish
– 1 small yellow onion, halved
– 2 small soup carrots, peeled and halved
– 2 celery stalks, cut into 3โ€ pieces
– 1 small fennel bulb, core removed
– 1/4 cup dry white wine
– 5 cups low-sodium chicken broth
– 1 bunch dinosaur kale, leaves torn into bite-sized pieces
– 1/2 cup small whole wheat pasta such as Tubettini or stars
– 2 tablespoons minced fresh dill
– Lemon juice, to taste
– Crusty bread for serving

To make the meatballs:
1. Preheat the Breville Smart Oven Air Fryer Pro to 350ยฐF on BAKE in rack position 5. Line the sheet tray with aluminum foil and coat with cooking spray.
2. In a large bowl, combine the milk and breadcrumbs and allow to stand for 5 minutes. Add the ground chicken, garlic, parsley, both cheeses, egg and black pepper. Using a spoon or your hands, mix ingredients until everything is evenly combined. Make sure to not overwork the mixture.
3. Dampen your hands a bit and form the chicken mixture into 2 tablespoon-sized balls (you will have about 8 meatballs). Arrange on the sheet tray with a little space between each meatball. Bake for 15
to 20 minutes, until the meatballs are just browned. Set aside.

To make the soup:
4. Set the Breville Sous Chef with the large dicing blade. Process the onions, carrots, celery and fennel. On the Breville Fast Slow GO, press SAUTE | SEAR (for the Fast Slow Pro select SAUTE, HI) and preheat the bowl. Heat the oil until shimmering and then add the diced vegetables and sautรฉ, stirring occasionally, for 7 minutes or until the onions are translucent.
5. Pour in the white wine and cook until reduced by half, about 3 minutes. Stir in the chicken broth. Secure the lid and close the steam release valve. Press SOUP and press START to begin cooking. (On the Fast Slow Pro, select PRESSURE COOK – SOUP and press START to begin cooking.)
6. To finish, press SAUTE on Low heat, stir in the kale and whole wheat pasta. Cook for 5 to 7 minutes until the kale is soft and the pasta is al dente. Add the meatballs and cook for about 2 minutes to warm them up. Stir in the dill and taste; adjust the seasoning with salt, pepper and
lemon juice as needed.
7. Garnish with more Parmesan cheese, a light drizzle or olive oil and warm crusty bread if desired.
