Easy Chicken Saltimbocca Family Recipe

This is a family recipe for Chicken Saltimbocca or Pollo Saltimbocca which literally means “jumps in your mouth” and in this case the chicken is so tasty that it will jump in your mouth! This a classic dish from Rome (alla Romana) that combines the flavours of fresh sage, prosciutto di Parma in a beautiful butter wine sauce. This recipe is really easy to make and can also be made with veal or pork. If you’ve never had Chicken Saltimbocca before, you’re going to love it. Enjoy from my family to yours
INGREDIENTS
8 chicken cutlets
8 slices of fresh Prosciutto di Parma
16 whole sage leaves (and extra for the wine sauce)
1/2 cup all-purpose flour
Pepper (generous amounts)
3 tbsp extra virgin olive oil
50g unsalted butter (half a stick)
1/2 cup of white wine
INSTRUCTIONS
1. On a flat work surface, place plastic wrap over chicken breasts and pound until thin. Season with generous amounts of ground pepper on both sides. No need to add salt as prosciutto that you will be adding in step 2 is already salty.
2. Place a slice of fresh Prosciutto di Parma and top with 2 fresh sage leaves on each chicken breast connecting with a toothpick to hold together the prosciutto and the sage onto the chicken.
3. Prepare a plate of flour and lightly dust the chicken. Shake off any excess.
4. Heat a large skillet and add 3 tablespoons of extra virgin olive oil along with 25g of butter (1/4 stick). Add your chicken breasts with sage and prosciutto face down and cook over medium low heat about 3 minutes per side or until cooked through. Add any extra leaves of sage in the oil. 5. Add another piece 25g (1/4 stick) of unsalted butter in your skillet and ½ cup of white wine. Cook until wine has reduced for about 2 minutes.
6. Repeat steps with any remaining chicken.
7. Transfer chicken to a serving plate and pour your buttery wine sauce on top. Decorate with fresh sage.
