I was doing a live FB demo- and internet went out so then continued by filming.
Pici is a local flour and water pasta, simple to make and so very good.
200 grams of 00 flour
1/2 cup of water– about 100ml
1 tbs olive oil
pinch of salt
Mix the flour and salt.
make a well in the middle.
Add the water slowly, mix in and then knead until smooth.
Roll out into a rectangle.
Cut into thin strips.
Roll out the strips into long cords.
Boil in salted water.
I served with ragu, add some of the pasta water to the ragu.
Heat, then add the pasta. I remove from the water, not DRAIN..(that way you can always save some of the pasta water if you need to add more to the sauce).
Add some grated parmigiano reggiano.
Cook together and enjoy!
