Pasta Primavera with Italian Sausage

Ingredients :
1 lb. Thin spaghetti or penne
Salt and ground pepper
Butter 🧈
Tbsp oil
1 pack Mild Italian Sausage
1/2 medium onion 🧅, diced
3 cloves garlic 🧄 ,chopped
1 large carrot 🥕, julienne
1 medium red pepper or sweet pepper , julienne
1 pack Button mushrooms, chopped
1 cup cherry tomatoes 🍅, halves
Knorr Cube
2 tsp dried Italian seasoning
1/2 cup or more pasta water
2 Tbsp fresh lemon juice
1/2 cup shredded parmesan, divided
chopped fresh parsley for garnishing

Directions:
Cook pasta as packaged directions. Add a little salt.
Set aside pasta water and drained .
Add butter 🧈 to pasta to stop cooking.

Brown chopped Italian sausage In a skillet with little oil.
Set aside. Heat oil In a skillet ,add carrots 🥕,bell peppers, and mushrooms. Stir fry for a few minutes. Set aside.
Sauté onion 🧅 and garlic 🧄 In heated oil.
Add the Cherry tomatoes,Italian seasoning, knorr cube,
lemon juice , shredded cheese and pasta water. Simmer until saucy then add the browned Italian sausage and vegetables.
Adjust taste with salt and ground pepper .
Add cooked pasta and sprinkle with shredded cheese.
Garnish with fresh parsley.
