The chickpea noodle soup we’ve been making on the reg and my latest ‘cooking lessons with TJ’ creation. Trying to get more comfy in the kitchen in 2022!

Ingredients:
3-4 large carrots, chopped
3-4 large stalks of celery, chopped
1 large onion, chopped
2 tbsp olive oil
1 tsp minced garlic
1 tsp Italian seasoning
1 qt chicken broth
1 qt water
4 packets Herb Ox chicken bouillon
2 cups uncooked pasta (rotini, elbows, penne)
1 can chickpeas

Steps:
Sauté vegetables in olive oil, italian seasoning and garlic. Once tender, add broth, water, and bouillon. Once boiling, add pasta and chickpeas.
