This rolled pork belly a.k.a Italian Porchetta is a fatty, boneless, juicy, and crispy at the same is a popular dish in Filipino gatherings. This is rich in fats yet succulent and delicious.

ingredients:
6 1/2 pound pork belly
2 heads garlic
2 medium size onion
156 g spring onion(scallion)
5 stalks lemon grass
2 tbsp. salt
2 tbsp. ground pepper
2 tbsp. powdered garlic
3 tbsp. coconut oil

Rub:
3 tbsp. liquid seasoning
1 tbsp. soy sauce
1/2 tbsp. oyster sauce

Dipping Sauce:
2 tbsp. spicy vinegar
2 tbsp. soy sauce
1 tbsp. Worcestershire Sauce
1/4 tbsp. chili flakes
1/4 tbsp. freshly cracked black pepper
Market Gravy Sauce

Procedure:
1. mix together liquid seasoning, soy sauce, and oyster sauce. Rub this all over the pork belly, use 3/4 for the meaty part and 1/4 over the skin. Also, season with salt and pepper.
2. Add all the chopped ingredients then roll, tie tightly with a piece of string.
3. Oven for 1 hour at 325 degrees, then increase to 350 degrees for another hour, increase one more time to 375 degrees for the next 1 hour and 30 minutes.
