TORTA PASQUALINA:
For the filling:
1️⃣ 6 artichokes [carciofi]
2️⃣ 400 gr ricotta [ ricotta ]
3️⃣ 6 egg [ 6 uova ]
4️⃣ cheese [ parmigiano reggiano grattugiato, q.b ]
5️⃣ nutmeg [ noce moscata ]

For the dough:
1️⃣ 200 gr of flour [200 gr di farina ]
2️⃣ 50 gr of oil [ 50 gr di olio ]
3️⃣ 2 pinches of salt [ 2 pizzichi di sale ]
4️⃣ 80 gr of white wine[ 80 gr di vino bianco ]

1️⃣ ready-made puff pastry [ pasta sfoglia,1 rotolo ]

COLOMBA:
1️⃣ 12 gr of yeast [ 12 gr di lievito di birra ]
2️⃣ 180 ml of water [180 ml di acqua]
3️⃣ 12 gr of honey [ 12 gr di miele]
4️⃣ 130 gr of sugar [ 130 gr di zucchero]
5️⃣ 2 egg yolks + 1 egg [ 2 tuorli + 1 uovo intero ]
6️⃣ 520 gr of manitoba flour [ 520 gr di farina manitoba ]
7️⃣ grated zest of 1 lemon and 1 orange [ buccia grattugiata di 1 limone e di 1 arancia ]
8️⃣ 100 gr of butter[ 100 gr di burro ]
9️⃣3 gr of salt [ 3 gr di sale ]
🔟 100 gr of chocolate chips [ 100 gr di gocce di cioccolato ]
1️⃣1️⃣ 150 gr of white chocolate [150 gr di cioccolato bianco]
1️⃣2️⃣ 200 gr pistachio cream [200 gr di crema al pistacchio]
1️⃣3️⃣ pistachio and sugar grains as needed [granella di pistacchio e di zucchero qb]
