My grandmother and my Mother made many scarcelle for Easter for everyone ,this is an old Molfettese tradition and of course Italian Tradition every year you see so many different type of scarcelle and all of them are wonderfully made with passion and love for our food and tradition!
ingredients:
for the filling:
300 gr of almond flower
150 gr of granulate sugar
a pinch of powder clover, and a pinch of cinnamon.
1/4 cup of water.
Blackberry jam
FOR THE DOUGH:
300 gr flour
200 gr of granulate sugar
100ml of extra virgin olive oil
1 lemon zest
20ml of milk
1 pack of vanilla
1 pack of pan degli angeli yeast for cakes
3gr of ammoniac (ammonium carbonate)
INCING: ( GLASSATA / SCLEPP)
175 ml of water
500 gr of granulate sugar
70 gr of honey ( optional)
