The Italian Bagnetto Verde or common called Salsa verde is the typical sauce for Italian mixed boiled meat, fish and croutons of bread.
Bagnetto Verde (Italian Green Sauce)
Ingredients:
30g Parsley leaves /prezzemolo
5g mollica di pane or the inner of sliced soft toast or loaf bread
10g white wine vinegar / aceto di vino bianco(or simply 1 tbsp white wine vinegar)
2 to 3 (7g to 10g) filetti di alici/asciughi (anchovy) al olio di oliva,
5g washed salted capers /capperi al sale (lavato ma non dissalato)
1/2 clove garlic (aglio)
40g Extra Virgin Olive oil (EVO oil)
10g boiled potato (patata lessa)
