Recently, we were talking with some Italian friends in Scotia and their “80-plus-young” dad about cooking… What intrigued us the most about this man (who emigrated from Italy), was the fact that he raves about VITO A. SINDONI & SON SAUSAGE… This week, while shopping, we decided to make Ratatouille, while buying Sindoni’s sausage at in Rotterdam. So, we also purchased eggplant, zucchini, yellow squash, onions, celery, sweet bell peppers (orange, yellow, and green), fresh basil, polenta — and of course, Vito A. Sindoni & Son Hot Italian Sausage — as well as Sindoni’s Sweet Italian Sausage…

We usually make our own Italian sausage and Spanish chorizo by hand. However, we want to thank our Italian friends, and especially their dad, for turning us on to Sindoni’s Italian sausage.

Ratatouille is a French Provençal dish, however, we fuse classical cooking techniques with Italian ingredients to make our Ratatouille a Creole-French-Italian dish… Our ingredients include chopped fresh eggplant, zucchini, yellow squash, and a Creole Mirepoix of chopped celery, onion; and green, red, and yellow sweet bell peppers — along with diced vine-ripened tomatoes, fresh garlic, Maldon Smoked Sea Salt flakes, cracked melange peppercorns, extra-virgin olive oil, and Herbes de Provence (an aromatic mixture of dried Provençal herbs and spices)…

We made this oven-roasted Ratatouille and served it with Grilled Polenta, and Vito A. Sindoni & Son Hot and Sweet Italian Sausage.
