This Italian dinner on the griddle with fried grit cakes, sausage, and meatballs is one of my wife’s favorite flat top grill dinners. It’s loaded with flavor and rivals any dinner you’d get at an Italian restaurant. We used the Pit Boss Ultimate Griddle today, but this would work great on your Camp Chef or Blackstone griddle also.

To make this Italian dinner griddle recipe, you’ll actually have to start a day early… Cook your polenta (aka yellow grits) the day before and refrigerate in an 8×8 Pyrex dish overnight.

VERY IMPORTANT – Replace the water in the polenta cooking instructions with chicken stock and heavy cream. We used Bob’s Red Mill Yellow Corn Grits aka Polenta, which calls for 3 cups of water to 1 cup of grits. So, instead of using water, we used 2 cups of chicken stock and 1 cup of heavy cream.

We also roasted our own garlic, which is SO easy to do and has an incredible flavor… Watch the video to see how to do that.

Squeeze the roasted garlic out into the chicken stock as it’s heating. Then, add your heavy cream and allow that to heat. Then, add your corn grits and cook according to package instructions. Once the grits are cooked and creamy, add 4 tablespoons of butter and stir until the butter melts. Then, remove the pan from the heat and add 1 cup of parmesan cheese.

Pour the roasted garlic and parmesan grits into a greased 8×8 Pyrex dish. Top with plastic wrap, and refrigerate overnight.

Then, the next day when you’re ready to cook your easy Italian dinner on the griddle, start by cutting the grits into squares. Coat them in a mixture of cornmeal fish fry mix and panko. Then, add some oil to your preheated griddle and fry the grit cakes on the first side until golden brown. Flip and conintue to fry until done.

The sausage and meatball marinara mixture is easy. Just cook your meatballs and Italian sausage on the flat top until about 75% cooked through. Then, add them to heated marinara sauce (in a pot on your griddle top) and allow to simmer in the sauce until the meat is cooked through.
