In this episode we are roasting peppers and seasoning them with olive oil and garlic, we will serve them with grilled Italian Sausage and onions, but roasted peppers are excellent as a side dish to chicken or steak or as an appetizer with crackers or garlic bread and some cheese.

Roasted Peppers
In a heavy pan such as cast iron place your peppers (do not add oil) you’ll want the pepper skins to get dark and blister. (see video). Once they are browned all around put them in a brown paper bag so they will sweat. After about 10 minutes, the skins should easily peel away. Once peeled you can slice the peppers and remove the seeds.
Place the peppers in a dish and layer with chopped garlic and olive oil, salt and pepper, then let sit.

Oven Sauteed onions
Fill a pan with sliced onions, add butter, olive oil, salt and pepper, bake at 350 for about 30 minutes, then keep turning until they are nice and soft.

For tonight’s dinner I’m adding my peppers to the onions, along with some grilled sausage.
