Cooking Tortellini soup in a Dutch oven that’s so good you won’t want to share. Besides it’s so easy to make.

Tortellini Italian Sausage Soup
12” Dutch oven
Ingredients:
1. 1lb Sweet Italian sausage
2. 1 cup chopped onion
3. 2 large Garlic cloves sliced or 1t Garlic powder
4. 5 cups beef stock
5. 2 cups diced tomatoes or 2 cans diced tomatoes
6. 1 4oz can tomato paste
7. 1 large Zucchini sliced
8. 1 large carrot thinly sliced
9. 1 medium size green pepper diced
10. ½ cup red wine
11. 1t Thyme
12. 1t Oregano
13. 1t black pepper
14. 1T dried Basil
15. 8-10oz. fresh or frozen cheese Tortellini
16. Fresh ground Parmesan cheese
Directions:
Brown the Italian sausage in a 12” Dutch oven over briquettes or coals. Crumbling with the back of a wooden spoon. Drain off grease as needed. Add onion and garlic to the Dutch oven sauteing until translucent. About 5 minutes. Add beef stock, tomatoes, tomato paste, zucchini, carrots, bell pepper, wine. Basil, and Oregano. Put lid on Dutch oven and simmer about 40 minutes. Then add the Tortellini cooking until tender.
Take the Dutch oven off the heat. Ladle into bowls and sprinkle Parmesan cheese on top to garnish.
Enjoy with a slice of Herb Artisan bread.
