Mushroom Risotto – Simple and beautiful rice dish.

Ingredients:

1 cup Arborio rice
¾ cups mushroom
½ cup white wine
1 mushroom flavored bouillon cube dissolved 3.5-4 cups hot water (or you can use mushroom broth)
1 sprig of fresh rosemary
3-4 cloves of garlic chopped
¾ cups of white onion sliced
Salt, pepper, Italian seasoning to taste
Cream 3-4 TBSP
Parmesan cheese
1 TBSP of butter
1 Green chili
Rosemary
Butter

Directions:

1. Heat some oil in a pan and add onions
2. Fry for 2-3 minutes and add garlic
3. Fry for another 2-3 minutes
4. Add mushroom and continue to fry until mushrooms are browned (about 7-10 minutes)
5. Season with salt, pepper, and Italian seasoning
6. Add rice and fry for another 3-4 minutes
7. Add white wine and let it cook for about 2-3 minutes
8. Add about 3 cups of broth and let it cook
9. Continue to cook for about 25 minutes and keep mixing it
10. Remove rosemary sprig
11. Add cream and cook for about 3 -4 minutes
12. Turn off heat and add cold butter and parmesan cheese and mix well.
