The Swabian Alb is a plateau in the south of Germany – it is the highest part of the foothills of the Jura Mountains. Alongside the “Alb-lentil”, the area is known for its pastries, “Laugenbrezeln” and “Maultaschen”. Spätzle with lentils are the Schwabian national dish.
