Ingredients:
~Vinaigrette~
1⁄4 cup (60mL) olive oil
2 tbsp (30mL) red wine vinegar
1 tsp (5mL) Dijon mustard
1⁄2 tsp (1.65g) garlic powder
1⁄2 tsp (0.5g) dried oregano
1⁄2 tsp (3g) salt
1⁄4 tsp (0.6g) black pepper
~Salad~
1 large head romaine lettuce, chopped
1⁄2 large red onion, thinly sliced
1 1⁄2 cups (225g) cherry tomatoes, halved
1⁄3 cup (60g) pitted black olives, halved
1⁄3 cup (37.3g) whole pepperoncini peppers
1 cup (43g) croutons
1⁄2 cup (40g) grated Parmesan cheese + additional for serving
Method:
In a small bowl, mix together the olive oil, red wine vinegar, Dijon mustard, garlic powder, dried oregano, salt, and black pepper until well mixed. Set aside.
Roughly chop up the lettuce and add it to a large mixing bowl.
Thinly slice half a red onion and add that onions to the bowl.
Add the halved tomatoes, halved black olives, pepperoncini peppers, and croutons to the bowl.
Gently toss the salad to evenly spread the ingredients.
Divide the salad into 4 equal portions into salad bowls.
Grate fresh Parmesan cheese onto the top of each salad.
Serve and enjoy!
Tips & Variations:
Not everyone is a fan of the black olives, so feel free to omit them from the recipe!
