What is Arancini?

For pizza, spaghetti and lasagna, it seems that they are too mainstream. Italian cuisine is not just that. There is one snack that resembles a croquette, but is made of rice. The inside is soft and creamy, while the outside is crunchy and savory, delicious eaten while warm.
The snack is called arancini. The shape is in the form of balls made from rice and given a layer of breadcrumbs. For the filling, there are meat sauce, tomato sauce, mozzarella cheese, and peas. Usually, these balls are cooked by frying, although some are baked.

In fact, arancini came from the island of Sicily, the land of the mafia. This food has been around since the 10th century. The name arancini is taken from the Italian word arancina which means small orange, because of its round shape and yellow-orange color like oranges.
Arancini has various variants. The type commonly sold in Sicilian cafes is arancini con ragu, which consists of meat, tomato sauce, rice and mozzarella cheese. Other variants are con burro (butter), con funghi (mushroom), con pistacchi (pistachio nuts), and con melanzane (eggplant).
Cooking the arancini filling can take a while. The chefs there will store the filling first in the refrigerator if it is not processed immediately.
The rice used will be cooled before making the arancini, so that the beaten egg mixed into it is not cooked. In fact, for the sake of creating a nice shape, rice can be stored in the refrigerator overnight. Arancini can also be made from leftover risotto.
Like potato croquettes, uncooked arancini balls can be stored in the refrigerator. Likewise for arancini that have been fried but not finished. These foods can be fried or re-baked and then served. The deliciousness will not change.
In the Land of Pizza, arancini is often sold in roadside stalls, it’s a bit difficult to find it in starred restaurants. Italians usually serve these fried balls as a snack at a party or accompany a salad.
