Today I share with you my recipe of a delicious and tender Beef Osso Buco. Traditionally Osso Buco is made from veal, but beef works just as fine.
The Assumption that beef is less tender is not correct, with this recipe I show you how delicious and tender this Beef Osso Buco is gonna get.
Osso Buco means bone with a hole and in that hole you gonna find the bone marrow, what is the most nutricious part and super delicious. While you stew the meat in the oven, the bone marrow is going to leak into the sauce for the most part which gives your sauce the most wonderful taste.
I serve this Beef Osso Buco with Cremolata, a delicious topping of chopped parsley, garlic and grated lemon zest.

Recipe for 2-4 persons:
4 slices of beef, cut from the shank
seasoned with salt and fresh pepper

Vegetables for the sauce:
1/2 leek
2-3 carrots
1/4 celery
1 white onion
3 garlic cloves
2-3 Tbso of tomato paste
6 cherry tomatoes
2-3 bay leaves
200ml red wine
1000ml homemade vegetable broth or water

Cremolata:
a handful of parsley leafs
1 garlic clove
1/2 grated lemon zest

Time in total: 2.5 hours
Stew time: 2 hours at 180°C/360°F
