How to cook spaghetti alla chitarra con le pallottine alla teramana – meaning with very small meatballs cooked the Teramo way, which is a town in Abruzzo region in central Italy.
This is a very traditional dish from Abruzzo region, in particular from Teramo. It includes very small meatballs made of minced beef and cooked in a tomato sugo. And yes, this version of spaghetti with meatballs is an authentic Italian dish (abruzzese). The meatballs should be as small as 1 cm, which allows to eat them without knife – Italian pasta dishes are typically eaten without knife. This dish is usually eaten with spaghetti alla chitarra, which do not have a round shape, but a quadratic shape.
Ingredients for 3 persons:
250 g of spaghettti alla chitarra (slightly bigger size and quadratic, alternatively use standard spaghetti)
For the tomato sugo:
½ onion
½ carrot
½ celery
basil leaves
extra virgin olive oil
400 ml of tomato polpa
1 chili (optional)
For the small meatballs:
250 g of minced beef
1 garlic clove
parsley
1 egg
some breadcrumbs
50 g of Parmigiano Reggiano
pepper
salt
nutmeg
00 type flour
