Searching for easy weekday soup recipes for one? In this video I’ll show you three soups I made myself for lunch in one week, each of them comprised of accessible and simple whole food ingredients. I also share my philosophy for soup making – what are the basic principles, how do I add flavour, what makes a good broth or stock.
It can be hard to cook for just one person when most recipes are for 2 or more. Soup can feel like the kind of meal that requires a big batch cook, when in reality you can easily make a personal portion of soup in 20 – 30 minutes with ease. It’s satiating and nutritious – one of my favorite things to eat!
