When the railroads were feeding their passengers, they also fed their train crews. This recipe was originally from the Elgin, Joliet & Eastern Railway, and was so popular with their train crews that they bragged about it to crews of other railroads, who in turn asked for the recipe to feed THEIR crews.
This is very hearty, and extremely simple to make, with fewer ingredients. It’s also pretty quick as well, taking only a half hour to bake. The recipe as it is will feed 6-8 people, and fill them up fully. We each had one serving, and were got completely full – with LOTS of leftovers! So if you make this, you’ll be able to feed a BUNCH of people!
