In this video I show you how easy it is to make a delicious, creamy Risotto Milanese.
Risotto Milanese is an Italian classic and gets it’s golden color from the saffron. There are some details you want to consider to get a creamy risotto (which I’m going to explain) and these also apply to any other kinds of Risotto.

Ingredients for 2 persons:
300g risotto rice (Arborio, Carnaloni, Vialone) ~ 11 oz, 1.3 cups US
2 big shallots
120g butter ~ 4.2 oz, 1 stick US
80g grated parmesan ~ 7 oz, 1 cup US
250ml white wine ~ 8.5 oz , 1 cup US
1500ml vegetable broth ~ 50 oz, 6 cups/US
some saffron
black pepper
salt if needed

parmesan flavored foam:
250ml milk ~ 8.5 oz , 1 cup US
end piece of the parmesan
some grated nutmeg

cooking time : ~ 20-25 minutes
