“Taste of Europe” is a video series featuring diplomats stationed in Taiwan cooking dishes from their home countries.
In the latest episode, Italy”s representative to Taiwan Davide Giglio and his daughter Aurora teach everyone how to make Pasta alla Norma.
Representative of the Italian Economic, Trade and Cultural Promotion Office Davide Giglio introduces the ingredients needed to make Pasta alla Norma. The ingredients are pasta, eggplant, onion, herby tomato sauce, extra virgin olive oil, minced garlic, dried oregano, salt, black pepper, ricotta salata cheese, and fresh parsley.

It”s named after a famous Italian opera of 1831 called Norma. Which was composed by a Sicilian composer. There”s a famous area called Casta Diva which I believe everybody in Taiwan knows because Taiwanese love Opera as much as they love Italian food.
The first step is to chop the eggplant and deep-fry them. Then, boil the water, add pasta, and a bit of salt.

We don”t put too much at the beginning. We put the pasta, we will have to cook the pasta for about 10 minutes.
After that, it”s time to prepare the sauce. Mix the onions, the egg plant, with the tomato sauce.

It will take usually 15 minutes to deep fry. Depends on how much eggplant you have cut up.
Then, mix the pasta and the sauce together.

Once the color becomes all red, it will be time to to add the white color [cheese].
Then, add the ricotta cheese, basil leaves, and olive oil into the pasta, and it”s ready to be served. A new episode of “Taste of Europe” is released every Friday.
