The “Sugo del Contadino” or “Farmers’ Pasta Sauce”, is one of the most iconic dishes in the Umbrian rural cuisine: made with different types of meat, tomato sauce and vegetables from the garden, this was a quick one-pot filling pasta sauce served by farm women for special occasions and large family gatherings.
