In this video, we decided to take a break and make a Gourmet Meatball Sub with fresh basil and provolone cheese… Then, we make fresh ravioli made from our fresh-made pasta dough — stuffed with prosciutto, porcini mushrooms, shaved black truffles, roasted diced red pepper, roasted garlic, minced fresh basil, minced fresh parsley, mascarpone cheese, ricotta cheese, smoked sea salt, Pecorino-Romano cheese, and white pepper… The finished ravioli is then simmered in a pot of water for approximately 4-minutes until they float…
The sauce for ravioli is made from butter, EVOO, white truffle butter, roasted pine nuts, chiffonade of fresh basil and fresh parsley, crispy prosciutto — and is garnished with more Pecorino-Romano cheese.

For our PRE-EVENT Best Braggadocio Meatball Contest, we are dining out between the month of February and March… We are dining anonymously to scout out cafés, caterers, delis, mom & pop grocery shops (that have prepared foods), pizza parlors, and sit down restaurants — to recommend a few places for the public to dine out and judge made-from-scratch Italian meatballs — as well as to encourage the public to ENTER the “MEATBALL & SELFIE” photo contest — for a chance to WIN A $125 Gift certificate to shop at a local artisanal butcher shop…
“The People’s Choice Awards” for 1st, 2nd, and 3rd Place BEST BRAGGADOCIO MEATBALL will be awarded bragging rights, trophy plaques, and T-shirts — 4th, 5th, 6th, 7th, 8th, 9th, and 10th Place runner-ups will receive award certificates, and T-shirt, for their homemade Italian meatballs.
