Need a last-minute midweek meal on a budget? Try easy Instant Pot Risotto! We eat it once a week, the variations are endless! Here’s what I used: onion, garlic, Arborio rice, a good glug of wine, water, stock cubes, fresh parsley, freshly grated parmesan cheese, salt and pepper, a squeeze of lemon juice. Optional: cooked chicken, crispy bacon, shrimp, mushrooms, spinach, peas, butternut squash, asparagus, rucola/arugula, leek, shallots, brussels sprouts, pine nuts…

INSTANT POT RISOTTO

For two people I use approx 100 grammes (approx 120 ml in a measuring jug, or half a cup) of rice and approx 350 ml or 1 cup of stock, slightly less if I use a good glug of white wine. We usually bulk out the risotto with other ingredients or serve it as a side dish.
