I visited my friend Chef Tom at his home to see what he was cooking. He knows that I am trying to remove meat and most dairy from my diet and he offered to share with me some recipes that would help. I’m super excited about this

In PART 2 Chef Tom continues with prepping the fresh veggies for the Vegetarian “Philly Cheese” Subs.

VEGETARIAN MEATLOAF

36 oz Impossible plant based protein
2 eggs

3/4 cup Panko Breadcrumb
2 cloves crushed garlic
1/2 cup ketchup
2 T olive oil
1 t rosemary
1 t oregano
1/4 t black pepper
1/2 t salt

Pre-heat oven to 400F. Spray nonstick spray on bottom of pan
Mix all the ingredients in a medium mixing bowl and form into meatloaf right on the pan. Pour a 1/4 inch of water on sheet pan and Cook for 35 minutes. Glaze with ketchup or bbq sauce and cook for 10 minutes more. Slow to rest for 10 minutes and serve.
