Chicken Margherita Recipe:
Chicken Breast – 6 nos
Salt – 2 Pinches
Black Pepper Powder – 2 Pinches
Olive Oil – 2 tbsp + 2 tbsp
Oil – 2 tbsp
Garlic (finely chopped) – 8 cloves
Basil (julienned) – 2 tbsp + 1 tbsp
Tomatoes – 4 nos
Tomato Puree – ½ cup
Water – ½ Cup
Salt – 1 ¼ tsp
Sugar – 1 tsp
Tomato Roundeles – 6 Slices
Mozzarella (grated) – 1 ½ cups
Cooking Instructions:
1. Score and blanch the tomatoes, keep them in ice-cold water. Peel the skin, deseed it and chop it into chunky dices.
2. Heat olive oil in a pan, add garlic and saute it for a few seconds. Add the basil and cook it for a few seconds.
3. Add the chopped tomatoes and saute for a minute.
4. Add the tomato puree, mix it well, add water, bring it to a boil. Cover and simmer the sauce for 25 minutes, stirring occasionally.
5. Heat oil in a non-stick pan, sear the chicken to a golden brown colour on both sides.
6. In a baking dish or skillet, apply sauce at the base, place the chicken over the sauce
7. Generously add mozzarella cheese on top.
8. Place a roundel of tomato on each chicken breast, sprinkle julienned basil on top.
9. Bake it in the oven till the cheese is gratinated.
10. Serve it hot.
