Recipe & Method:
Yield : 1 cup (I did 3x the recipe and ended up with 3 cups so this is pretty accurate)
2 packed cups of fresh basil leaves
1/3 cup pine nuts
1/2 cup extra virgin olive oil
1/2 cup parmesan cheese
3 cloves minced/crushed garlic
1/4 tsp salt
1/8 tsp freshly ground black pepper
Method
1. Mince garlic into mortar & add pine nuts. Crush into a paste/spread like consistency.
2. Add basil leaves roughly 1/2 cup at a time and grind until the basil leaves and pine nut paste combine to a creamy like consistency.
3. Add in the cheese & blend
4. Add in the oil little bits at a time until the mixture lightens in colour and it becomes smooth
5. Serve!
