Ingredients:
500g porcini mushrooms
1 whole onion
1 pinch salt
1 pinch parsley
1 porcini mushroom bouillon cube
1 vegetable bouillon cube
1 pinch pepper
1 tbsp olive oil
1 cup white wine
1 cup water
180g arborio rice
150g parmesan

Instructions:
1. Cut up 500g of mushrooms into smaller pieces and place them in a pan
2. Cut up 1 onion into small slices and add to the pan with the mushrooms
3. Add 1 pinch of salt, 1 pinch of parsley, 1 porcini mushroom bouillon cube, 1 pinch of pepper, and 1 tbsp of olive oil, ½ cup white wine, 1 cup water, and place on medium heat
4. Leave the pan to cook for 30 minutes, stir occasionally.
5. Fill a pot with water, place 1 vegetable bouillon cube in the water and cook on medium heat until the bouillon cube has melted into a broth, simmer on low heat.
6. Add 180g of arborio rice to the pan with mushrooms and mix together, adding 2 cups of the broth each time, on medium heat. Continue adding the broth every few minutes and stirring until the rice becomes soft (about 20 minutes.) It is important to continue stirring and adding more of the broth for all 20 minutes to get the right consistency
7. Add 1/2 cup of white wine and cook for another 2 minutes then turn off the burner, add 150g of parmesan and mix together until it has turned to cream.
8. Add optional parmesan on top and enjoy!
