PASTA AL LIMONE 🍋 ✨ recipe below!👇 I played around with these delicious colonne noodles that I got from my local Italian market. LOVED the recipe with it but you can use traditional spaghetti, bucatini, tonnarelli or even a funky malfadine here 😍
▪️1 lb colonne pasta (or any pasta of your choice)
▪️Kosher salt
▪️4 tbsp unsalted butter
▪️1 1/3 cup heavy cream
▪️Zest of 2 lemons, (reserve zest of 1/2 lemon for topping)
▪️2 tbsp lemon juice
▪️1/2 cup Parmesan
▪️Chopped tarragon
▪️Black pepper
Bring a stock pot (or Dutch oven) of water to a boil. Season generously with salt according to pasta package instructions. Once the water is boiling, cook the pasta until al dente.
As the pasta cooks, place a large skillet on low heat. Melt the butter. Add the zest of 1 1/2 lemons and heavy cream. Mix until combined. Add the lemon juice and mix until combined. Adjust the heat to medium and bring this mixture to a simmer. It should begin to bubble and thicken.
Add the al dente pasta to the sauce. Stir until fully coated. Adjust the heat to medium high. Sprinkle the Parmesan onto the pasta and pour over 1 cup of pasta water. Allow this mixture to bubble until it reaches your desired thickness. Taste to ensure you like the levels of salt/lemon/cheese. If not, adjust!
Plate and top with the remaining zest of 1/2 lemon. I also love fresh tarragon and black pepper along with more Parm 😍
