A quick recipe
Slice aubergine into thin piece.
Add salt, pepper 1tbsp & drizzle some oil over aubergine.
Now bake it in oven for 20 min at 200°C
Now to a pan add 2cup water & boil it.
Now add 5 tomato, 1onion & 5 red chilli and boil for 5 min.
Now remove it from water & Peel the skin of tomato, remove the seeds from red chilli.
Now blend it to a fine paste.
To a pan add oil 2tbsp, chopped garlic 1tbsp and the blended paste.
Cook for 5-10 min and now add 2tbsp tomato ketchup, oregano, dried basil, salt & cook for 5more minutes to get a thick sauce.
Now to a pan add baking sheet, 5tbsp of prepared sauce& arrange the baked aubergine over the sauce.
Now add some cheese & repeat the steps by adding sauce, Aubergine & cheese.
Bake it in a preheated oven at 180°C for 30min.
Serve hot with chopped coriander leaves.
