The Aura di Valerie is a gorgeous addition to the kosher wine scene. It’s made by partially drying out the grapes after harvesting, which concentrates the sugars and flavor to make a powerful wine.
In the nose, we get cherry, blackberry, red licorice and something medicinal. The mouth is dry with fantastic acidity and ripe tannins. Flavors of dark chocolate, cherry, strawberry, raspberry and cinnamon with some underlying mushroom notes. The finish is long and lingers pleasantly.
Pair with meat and pasta, something that can stand up against the wine’s bold structure and high alcohol.
