This will be the best vegetarian bolognese sauce you will ever have, and you can’t even tell the difference if you use good quality veggie minced meat
Ingredients:
– Spaghetti (500g)
– Vegetarian minced meat (I used beyond meat) 600g
– Onion (2pcs)
– Garlic (3-4pcs)
– Carrot (1.5pcs)
– Celery (4pcs)
– Canned whole tomatoes (2cans)
– Laurel leafs (2pcs)
– Vegetable stock block (1pc)
– Olive oil (2-3tbsp)
– Red wine (1splash)
– Parmesan cheese
Steps:
1. Chop the onion, garlic in small pieces
2. Clean the carrot and celery. Cut the carrot in small blocks and cut the celery in slices
3. Heat olive oil in a large pan and fry the onion and garlic for 2-3 minutes
4. Add the carrot and celery and cook them for 5 minutes
5. Add the vegetarian meat and cook it for 5-6 minutes
6. Add two cans of whole tomatoes and crush the tomatoes as they are getting cooked
7. Add 1.5 cans of water, crush 1 vegetable stock block and add 2 laurel leafs
8. Add salt & pepper to taste
9. Add a large splash of red wine
10. Let it summer for a minimum of one hour. Stir your sauce in between
11. Cook your pasta as indicated on the package and serve the pasta and bolognese with grated parmesan cheese
