Today Christmas day is a little bit different, but it’s always a magical day.

In this video I show you what I’ve cooked and eaten for Christmas as a vegetarian italian. A couple of these dishes represent my family traditions.

INGREDIANTS
FOR PASTA
320 gr flour
1 egg
About 130 g of water
* with these doses I obtained 6 sheets of pasta and 140 gr of Macaroni

FOR THE TOMATO SAUCE
½ l Tomato sauce
3 eggplants
½ small onion
Extra virgin olive oil

FOR THE LASAGNA FILLING
Tomato and eggplant sauce
350 gr bechamel sauce approx
220 gr smoked scamorza
Parmesan
salt
pepper

FOR THE LENTILS MEATBALL
130 gr dry lentils
3 carrots
2 potatoes
1 egg
About 100 gr breadcrumbs
40 gr provolone
1 roll of shortcrust or puff pastry
Parmesan
salt
pepper
nutmeg

FOR THE CONTOUR
2 potatoes
2 carrots
1/3 onion
Oil
salt
Fresh rosemary

FOR THE PANDORO
5 eggs
5 tablespoons of sugar
500 gr mascarpone
salt
1 Pandoro
125 gr raspberries
Chocolate chips
Powdered sugar
