Hi folks! Today I made a lovely Christmas dinner inspired soup! This would be lovely on the run up to Christmas Day or even on the day itself! This is Christmas in bowl 🙂 It has many of the traditional flavours that I think of when I think of my own Christmas dinner…sage, thyme, chicken (or turkey!), parsnips, potato…just lovely!
Everything I used will be listed below.

A couple of tablespoons of oil for frying
Salt & white pepper to taste
1.5 (50.7 oz) Litres of chicken stock
2 Medium onions – finely diced
3 Cloves of garlic – halved
350g (12.3 oz) Sweet potato – cubed
350g (12.3 oz) Parsnips – cubed
1 Tablespoon dried Sage
8-10 Sprigs of Thyme (discard the stalks)
300g (10.5 oz) Chicken fillets/tenders or diced chicken breast __________________________________________________________________________
