Italian Christmas lemon knot cookies
Ingredient for cookies:
1 cup sugar
1 stick butter, softened
4 eggs, beaten
4 cups flour
2 teaspoons vanilla
4 teaspoons (1 tablespoon and 1 teaspoon) baking powder
sprinkles to top
Ingredients for icing:
1 ¼ cups powdered sugar
¼ cup lemon juice
1 teaspoon vanilla
Equipment:
A large mixing bowl
A small mixing bowl
Measuring spoons
Measuring cups
A fork
A knife
A mixing spoon
Tin foil
Baking sheets
The Process:
Step 1: Wash your hands
Step 2: Preheat your oven to 350° Fahrenheit
Step 3: Cream your butter and mix it with sugar
Step 4: Add remaining wet ingredients and mix
Eggs, beaten, and Vanilla
Step 5: Add remaining dry ingredients incrementally
Slowly add the flour and baking powder little by little to the butter mixture
Step 6: Roll your cookies into knots
Roll them into logs then tie them into knots
Step 7: Put your cookies in the oven
Step 8: The sneaky-deaky step- the icing
While your cookies are baking, combine powdered sugar, vanilla, and lemon juice in a small bowl
Step 9: Take your cookies out, ice them, and plate them
The cookies should be slightly golden on the top and a bit darker on the bottom
Once they come out of the oven, let them cool for 10 minutes
Once they’re cool, either drizzle the icing over the top of them or dip them in the icing
Sprinkle sprinkles on top for decoration
