Wondering if there’s a creamy and savory dressing that’s lower in fat? The answer is yes. Meet the Delicious Creamy Italian Vinaigrette!
By the end of this video, you’ll be able to make any dressing creamier and lighter by building on the 3:1 ratio for making most salad dressings.
Creamy Italian Vinaigrette Recipe
Serving Size: 1 tablespoon for 2 cups of greens
Total Servings: 4
Tools:
Small bowl, spatula, whisk and measuring spoons.
Ingredients:
3 tablespoons, extra virgin olive oil
1 tablespoon, white wine vinegar
1 teaspoon, dried basil
1 teaspoon, dried oregano
1 teaspoon, dried thyme
1/4 teaspoon, minced garlic
1 tablespoon, Fage Greek yogurt 0% fat
1 teaspoon, cold water
Instructions:
Add oil, vinegar, dried herbs, garlic, yogurt and water into the bowl. Whisk for 10 seconds or until well combined. That’s it!
You can use any combination of dried herbs, like parsley. I used thyme instead because it has a bolder flavor than parsley.
In this recipe I used Fage yogurt. You can use any type of Greek yogurt. The brand will change the amount of cold water to use. The thicker and drier the yogurt, the more water you use. Fage is pretty dry in comparison to other brands. So if you’re going to use other brands, consider using less water.
Toss 1 tablespoon of dressing with 2 cups of mixed dark greens and there’s your simple side salad.
The foundation to making a creamy herby vinaigrette is a 3:1:1:1 ratio. 3 parts oil, 1 part acid, 1 part dried herbs, 1 part yogurt. You can substitute oils and acids to suit your tastebuds and add other ingredients.

If we used mayo, that would be another 94 calories and 10 grams of fat for this recipe, as opposed to 7.5 calories and 0 grams of fat from the yogurt.
Please make sure to use Extra Virgin Olive Oil because it has the most Omega-3s out of all the plant oils. This is a HELPFUL cholesterol that can lower the risk of heart disease and diabetes with a balanced diet; white wine can help lower a spike in blood sugar; garlic helps strengthen the immune system; dried herbs like oregano, basil and thyme have anti-inflammatory and anti-carcinogenic properties.
