Easy baked pasta dish for van life. Chop parsley. Brown Italian sausage on cooktop. Add half to ricotta with an egg and shredded Italian cheese mix. Season to your taste. Boil pasta, add to casserole pan with olive oil. Mix in cheesy ricotta, browned sausage, marinara sauce (Rao’s rocks!). Top with shredded cheese then finally parsley. Bake 35-40 min at 325F (convection) until cheese top is melted and bubbly. Cool and enjoy!
