Ingredients

4lb Panamei Squid Rings (Calamari), thawed
4 Tbsp Olive Oil
1 Large Onion, finely chopped
3 Garlic Cloves, lightly crushed
2 Tbsp Tomato Paste, diluted in 1 cup of water
1 Can (14oz) Tomatoes, peeled, and crushed
Dry Bay Leaves
Fresh Basil leaves, roughly chopped
A Pinch Dried Oregano
Salt and Pepper, to taste
Pepperoncino (Red Hot Pepper), optional
1 Cup Dry White Wine

Instructions:

In a large saucepan, heat oil to medium-high and sauté the onion until it turns slightly golden; add the garlic and sauté for a couple more minutes. Add the tomato paste and continue cooking for about 5 minutes, constantly stirring. If the sauce gets too dry, lower the heat, and add water or white wine, just a little at a time.

Stir in the crushed tomatoes, basil, oregano, bay leaves, pepperoncino (optional), salt, and pepper and bring to a boil; add the Squid Rings (Calamari), and the wine; cook for 3-5 minutes and then remove the calamari from the sauce with a slotted spoon, set aside.

Lower the heat to continue simmering the sauce, uncovered, and stirring occasionally for about 15 minutes until the wine evaporates.

Serve in a large bowl —family style— Garnish with chopped basil or parsley.
