veggie lasagna | kitchen witches | 8PM
family favorite! this dish is delish, simple and healthy. what more could one want!
veggie lasagna:
~ slice zuchinni and eggplant, salt and let sit for at least 20 mins to pull water out
~ rub salt off and either place in oven until tender or pan cook
~ combine mascarpone with an egg and seasonings
~ once veggies have cooled start assembling
~ use any sauce you like and place on bottom of a baking dish
~ layer veggies, mascarpone mixture, sauce, veggies, mascarpone etc
~ top with parmesan cheese
~ bake at 450 degrees until bubbling and cheese top is light brown
