Search for:

2 tablespoons olive oil
1lb. italian ground sausage
1 medium onion (diced)
4 cloves garlic (finely minced)
salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons smoked paprika
2 teaspoons italian seasoning
1 red bell pepper (seeded and diced)
2 carrots(peeled and chopped)
3 quarts of chicken broth (low sodium)
Delicata squash (peeled and cut in 1/2 in. cubes) or butternut squash
12 oz. frozen finely chopped kale
Shredded Parmesan Cheese for garnish

Heat a large soup pot over medium-high heat add olive oil and italian ground sausage to the pot.
Brown sausage for 7-8 minutes using a potato masher or wooden spoon to break into bite-sized pieces.
Add garlic, diced onion to the pot to and sauté for 1 minute.
Now add the bell pepper ,carrots, squash, stir good, then add the chicken broth and the seasonings.
Turn heat up to bring to a boil and cook veggies till tender.
Add frozen chopped kale and let the soup go for another 3 minutes.
When soup is done ,ladle some in a bowl and top with a sprinkle of shredded parmesan cheese, and enjoy.
