3 tbs extra virgin olive oil
1 garlic clove, chopped
1 lb Italian sausage, off casing, crumbled
12 oz diced mushrooms of your choice, I used domestic
2/3 cut dry white wine
1 1/2 cup chicken stock
1 cup heavy cream
1 tbs parsley, chopped
TT salt and black pepper
1/2 cup grated Parmigiano cheese
In. Skillet sauté garlic with olive oil, and just before it turns darker yellow add sausage, brown well. Deglaze with wine and reduce well. Stir in mushrooms and brown again, the deglaze with broth, bring to boil and add cream, season with salt and pepper and simmer for five minutes. Cook pasta according to directions, drain and toss with sauce over high heat.
