As an Italian born and bred, I love fennel! So, today I am going to show you how to turn this amazing vegetable into a very tasty dish. In this video, we are going to make lo sformato di finocchi (fennel mold). It is a delicious dish that you can serve to complement any main course. It’s tasty, cheap, full of flavour and quintessentially Italian! Enjoy it!
INGREDIENTS
3 large bulbs of fennel
200gr of breadcrumbs
200gr of grated Parmesan cheese
1 egg
Olive oil
Salt
For the besciamella
50gr of butter
3 small tablespoons of flour
150ml of milk
Salt
PREPARATION
Slice the bulbs of fennel.
Heat up the olive oil in a large pan. Place the slice fennel in it. Add a couple of glasses of water and a few pinches of salt. Cover and let it cook until the fennel are soft. Turn the heat off.
Meanwhile, melt 50gr of butter in a small pan. Add 3 small tablespoons of flour and mix to obtain what is called roux. Start adding 150ml of milk. Keep stirring at low heat until the it thickens. Then turn the heat off.
Now you can start preparing the sformato. First place a layer of besciamella and breadcrumbs at the bottom. Add the first layer of fennel. Then lay the besciamella again, a few tablespoons of breadcrumbs, a few pinches of salt. Sprinkle abundant grated Parmesan cheese and start all over again. When you get to the last layer, before you sprinkle the cheese, pour a beaten egg over the fennel.
Cook in the oven at 180C (355F) for 40 minutes. Let the sformato rest for at least 20 minutes before serving.
