How to easily cook a pumpkin soup the Italian way – including some freshly collected olvies from the season
Autumn is pumpkin season – pumpkins are healthy and extremely delicious when they are prepared the right way. In this video recipe you will learn how in Italy pumpkins are used to create relatively easily a delicious soup that can serve both as starter or as main dish.
Ingredients for 3 persons:
1 pumpkin (about 1 kg)
1 potato
1 golden onion
1 shot of white wine
extra virgin olive oil
1 garlic clove
salt
pepper
nutmeg
1 chili (optional)
a few fresh olives for the topping (optional)
some pistchio for the topping (optional)
some Italian bread (e.g. ciabatta) to eat with the soup (optional)
