We’ve seen a few one pan sausage rice recipe on the internet, so we thought we’d create our own, delicious vegan version! This dish is delicious – cooking everything in the same pan means the flavours become really deep and rich, which complement the fresh, zingy herbs and spring onions added at the end perfectly. It’s very moreish, we reckon you’ll be adding it to your regular recipe repertoire immediately!

This recipe is super quick and easy so makes for a perfect mid-week dinner. Scrumptious!

Ingredients:
1 tbsp olive oil
1 red onion
2 cloves garlic
1 red pepper
400g vegan sausages
1 tsp paprika
1 tsp italian herbs
1 tsp chilli flakes
½ tsp fennel seeds
400g basmati rice
1 bay leaf
125ml white wine
900ml vegetable stock
4 spring onions
150g cherry tomatoes
15g fresh basil
Salt and pepper to taste

To Serve
50g rocket
Balsamic vinegar for drizzling

Prepare the ingredients | Crumble the sausages (you may need to take the skin off | Peel, halve and slice the red onion | Halve, deseed and slice the red pepper |Peel and grate the garlic | Finely slice the spring onions at an angle | Dice the tomatoes | Pick the basil leaves and finely slice

Time to cook | Warm the olive oil in the pan over medium heat | Add the red onion and a pinch of salt to the pan and stir for 4-5 minutes | Add the garlic and stir for 1 minute | Add the pepper and stir for 1 minute | Add the paprika, italian herbs, chilli flakes and fennel seeds to the pan and stir to combine | Add the sausage and stir for 2-3 minutes until the “meat” is starting to caramelise | Add the rice and stir for 30 seconds | Add the bay leaf | Add the wine and stir for 2 minutes | Add the stock, stir to combine, turn the heat down and simmer for 12-13 minutes | If your rice is still a bit firm, splash in another 100ml of water and stir until the rice is your desired consistency

Finish and serve | Remove the bay leaf | Taste and season to perfection with salt and pepper | Add the spring onions, cherry tomatoes and basil to the pan and fold together | Spoon the One Pan Sausage Rice into serving bowls, dress with a little rocket, drizzle over some balsamic vinegar and serve immediately
